Ingredients You’ll Need

I actually got this recipe from my friend Amber from Dessert Now Dinner Later! We swap recipes that our picky eaters will enjoy and this one was such a hit I had to share, with her permission of course! Here is what you need:

  • Chicken: Boneless skinless chicken breasts are lean and cook evenly, ensuring each bite is perfectly tender without any tough or undercooked parts. The mild flavor of chicken breasts allows the rich, creamy taste of the artichoke dip to shine through, making a harmonious blend of flavors.
  • Seasonings: The right seasonings can elevate the flavors. Amber used Montreal steak seasoning, which is a hit, but we switched things up with a blend of salt, pepper, garlic powder, onion powder, and Italian seasoning. 
  • Artichoke Dip: This homemade version is our favorite dip to use, but you can use store bought. We tested both and found that each provided its own unique flavor to these juicy chicken breasts. Think of it as a creamy sauce finish to this easy dinner idea.
  • Cheese: A tasty addition. Both mozzarella cheese and parmesan cheese offer a good mix of melty gooey goodness and a slight salty finish. You can’t go wrong with either. 
  • Bacon: Ok, so this is optional. We tested with and without and thought it’s a win-win situation. Bacon is known for its savory, smoky taste. It adds a depth of flavor that complements the creamy artichoke and the mild taste of chicken beautifully. 

Baked Creamy Spinach Artichoke Chicken

Here’s a step-by-step guide for your Baked Artichoke Dip Chicken recipe:

  1. Preheat the Oven: Set the oven to 375°F (190°C). This allows it to heat up while you’re preparing the chicken.
  2. Season the Chicken: Pat the chicken breasts dry with paper towels. In a small bowl, mix together garlic powder, onion powder, Italian seasoning, salt, and black pepper. Rub this seasoning mix all over the chicken breasts.
  3. Cook Chicken on Stove Top: Heat olive oil or butter in a oven-proof large skillet over medium heat. Once hot, add the seasoned chicken breasts. Cook for about 2-3 minutes on each side, just until they start to brown. They don’t need to be cooked through at this point.
  4. Add the Artichoke Dip: Remove the pan from the heat and spread a generous layer of artichoke dip over each chicken breast. Make sure to cover them well.
  5. Add Bacon and Cheese: Sprinkle the cooked bacon pieces (if using) over the artichoke dip. Layer your chosen cheeses on top – mozzarella, Parmesan, and dots of cream cheese work well.
  6. Bake: Transfer the skillet to the preheated oven. Bake for about 15-20 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F) and the cheese is bubbly and golden.
  7. Finishing Touches: If desired, sprinkle a bit of lemon zest or red pepper flakes on top for added flavor.
  8. Serve: Let the chicken rest for a few minutes after taking it out of the oven. Serve hot, perhaps with a side of crusty bread, salad, or your favorite veggies.

Recipe Notes:

Is it necessary to use an oven-safe skillet?

No. However, it’s highly recommended for ease of preparation. If you don’t have one, you can sear the chicken in a regular skillet and then transfer it to a baking dish for the oven part of the recipe, which is what I did in the photos above.

Can I make this recipe with chicken thighs instead of breasts?

Yes, chicken thighs can be used. They’re juicier but keep in mind they may require a slightly longer cooking time due to their higher fat content. Cook until they reach that safe temperature. 

How do I know when the chicken is done?

The safest way is to use a meat thermometer. Chicken is done when it reaches an internal temperature of 165°F (75°C).

Can I prepare this dish in advance?

You can prep the chicken and artichoke dip ahead of time. Assemble and bake it just before serving for the best taste and texture. That being said, this does make a good meal prep recipe. I suggest reheating in the oven. 

How should I store leftovers?

Store leftover chicken stuffed with artichoke and spinach dip in an airtight container in the refrigerator for up to 3 days. To reheat, place in an oven safe dish, cover with foil, and cook at 350°F (175°C) for about 10-15, minutes or until heated through.
