How to Prepare Vegetables in Electric Smoker

Smoking your favorite food is an all-day affair, the best excuse to spend some quality time with your family and friends. You can cook some of your favorites or experiment with some new great recipes. It may take some time to prepare, but it is definitely worth it.

When we think about smoked food, usually we envision meat. But, with the right electric smoker, you can cook vegetables too. They are easy to make and delicious.

Onions

Remove the top of the onion and leave the bottom intact. Brush with olive oil. You can choose any seasoning you prefer or BBQ dry rub and sprinkle it over the onions.

Potatoes

Place the potatoes in the smoker and cook for about an hour at 400 degrees F. When it’s done, put them on a plate. Tip: If you are a meat lover too, you can serve them with a smoked turkey.

Tomatoes

Use a few pounds of Roma tomatoes, wash them and pat dry. For a better result cut them in half. Brush the with olive oil.

Sprinkle it with some garlic powder (1tsp.) and black pepper. Place them in the smoker and cook for about 3 and a half hours at 400 degrees F. They need more time to smoke, but it is worth it.

Store them in an airtight bag to preserve it for later. Tip: They go great with the smoked brisket.

Mushrooms

Clean it with water and remove all the dirt and the stems. For smoking this dish, it is best to use apple wood chips. In a large bowl put the 1 tsp. onion powder, 1 tsp. granulated garlic, 1 tsp. salt, 1 tsp. pepper, 1 tsp. canola oil and 4 cups of mushrooms.

Combine them all together. Put the mushrooms in the smoker and cook them for about 30 minutes at the 350 degrees F. Then turn the temperature up to 450 degrees F and smoke them for another 15 minutes.

Zucchini and squash

Cut 3 yellow squash and 3 zucchinis into the small pieces. Put them in a large bowl. Add cherry tomatoes (2 cups) and one sliced onion.

Cover the bowl with the plastic wrap and let it rest for about two hours. Put the marinated vegetables in the smoker and cook for three hours at 250 degrees F.

In a small bowl put the garlic (4 large cloves, minced), basil (2 tbsp. dried), balsamic vinegar (4 tbsp.), salt and pepper. Mix it well and let it rest for about 15 minutes. If you prefer you can remove the skin from the eggplant.

Slice it and place it in a large bowl. Pour the marinade over it. Mix well, so that all pieces are evenly covered.

Put them in the smoker and cook for about an hour and a half at 200 degrees F. After it is done, place it in a bowl and pour some olive oil over it.

Smoke the whole peppers so it can retain more water. After you wash it, cut the stems. Brush them with some olive oil.

For a smoking process, it is best to use Mesquite flavor Bisquettes. Smoke them for 2 hours at 225 degrees F.

They are best when used with the salads, omelets or sandwiches.

Cabbage

First, wash the cabbage. Core it and set aside one leaf. Put the butter inside the core, until it’s full.

Make a little well inside the butter with your finger and pour some white balsamic vinegar. Place that leaf that you set aside, over the top to secure the cabbage. Cook it for 4 and a half hours at 250 degrees F.

Garlic

Remove the head of the garlic bulb. Put that chopped bulb on the sheet, brush with the olive oil and sprinkle with the salt. After you have done this, wrap it in the foil, and make sure that the oil can’t leak.

Cook it for 2 hours at 170 degrees F. You can serve it immediately or you could store it and preserve for later.
