I like to keep things super simple when making lunch or a quick filling meal. This recipe is just that! Here is a quick breakdown of the ingredients I used, you can also mix in other flavor options like red onions, green onions, or even chopped veggies! 

  • Chicken: I selflessly tested a few options for you. Our favorite by far is Just Bare chicken bites. They are so crispy and pair perfectly with the sauce. However, I do make this with almost any leftover chicken, rotisserie chicken, or even grilled chicken. All taste equally delicious. 
  • Buffalo Sauce: Pick your favorite sauce for this spicy buffalo chicken! I’ve made it with Frank’s and Buffalo Wild Wings. I really like them both for different reasons. I say pick a sauce that you already like the flavor of! 
  • Lettuce: For wrap recipes, you want a lettuce that’s flexible, sturdy, and with a subtle taste, so it doesn’t overpower your other ingredients. Romaine lettuce is a top pick! It has long, strong leaves that hold up well when rolled, plus it adds a satisfying crunch. You can always use iceberg lettuce. You’ll have just a slightly different texture. 
  • Cheese: For that spicy, tangy kick, you’ll want a cheese that brings creamy balance and coolness. Blue cheese is a classic with buffalo chicken – its bold, tangy flavor complements the heat and adds depth. If blue cheese is too strong for your taste, go for shredded cheddar, mozzarella, or provolone.
  • Dressing: Here’s the deal, you can use ranch dressing, like I did, OR you can go a more traditional rout and opt for blue cheese dressing! Both will work, it really will just depend on the flavor that you want. 
  • Tortillas: Large tortillas are key here. They hold all of that juicy buffalo chicken and toppings in the most perfect way. You can also opt for low carb wraps by making a swap to your favorite low carb option. 

Easy Buffalo Chicken Wraps

Let’s get things rolling. Here’s how to make this deliciously easy quick dinner. 

  1. Prep The Chicken: If you need to cook your chicken (using frozen chicken tenders), do that now. You can use warm or chilled leftovers for this wrap. Lightly chop and add to a large bowl. 
  2. Mix The Filling: Add the lettuce, buffalo sauce, dressing of choice, and shredded cheese to the bowl with the chicken. Give it a light toss. 
  3. Tortilla Prep: Lay a large tortilla flat on a plate or cutting board. Add the filling mixture in the center of the tortillas, but be careful not to overfill. Leave a wide border around the edge — about 2 inches should do it.
  4. Wrap: Pick the bottom edge of the tortilla and fold it up over the filling. This bottom fold is important as it stops the contents from falling out when you start eating. Next, fold the left and right sides of the tortilla towards the center. They should partly cover the bottom fold. Now, hold the folded sides in place, and start rolling the wrap away from you. Keep it snug, but don’t squeeze the life out of it. 
  5. Enjoy: Once you’ve rolled to the end, you should have the seam on the bottom. This helps the wrap hold its shape. Serve and enjoy!

Can I make buffalo chicken wraps ahead of time?

Absolutely! But for the best texture, store the components separately and assemble right before eating. The tortillas might get soggy if you assemble them with the sauce too early.

How spicy is the buffalo sauce in these wraps?

That depends on your sauce! Buffalo sauce varies in heat, so pick one that suits your spice tolerance. You can always tone down the heat with more ranch or blue cheese dressing.

Can I use a different type of cheese instead of cheddar?
